Radish Salsa
The radish salsa is a traditional offering in parts of Mexico and South America. In Oaxaca, Mexico, elaborate sculptures carved from radishes are displayed each year on December 23rd, The Night of the Radishes. This is great served with soup.
Ingredients:
1 cup of water
4 tsp salt
1 tbsp red wine vinegar
1 cup finely chopped radishes
½ cup minced onion
¾ cup orange juice
½ cup limejuice
Directions;
Combine 1 cup of water, the salt, and vinegar in a bowl. Add radishes, onion, orange, and lime juice. Cover tightly and let the salsa rest in the refrigerator at least 1 and up to 3 hours before serving.
