Recipe from Melodie: BEETS

Yogurt and Cooked Beet Dip

This is a great appetizer or side dish that should be served with pita bread – enjoy!

Ingredients;

2 Large uncooked beets or 1 can (16 ounces) cooked beets, drained
1 cup of plain yogurt that has be drained in cheesecloth for approx. 3 hours
2 tablespoons granulated sugar
1 tablespoon chopped fresh mint or 1 teaspoon dried mint

Directions;

If using fresh beets, steam them with the skins on for about 1½ hours or until tender
Peel and cut cooked or canned beets into ¾-inch cubes.
Place the beets in a serving bowl.
Immediately before serving add the yogurt and sugar to the beets and mix. Garnish with the mint. Present on a platter with pita bread.
