Recipe from Carrie: TURNIPS
Maple-braised Turnips and Carrots
serves 4 to 6 as side dish
1 Tbs unsalted butter
1 lb. turnips peeled and cut in 3/4-inch cubes
3 medium carrots (about 1/2 lb.), peeled, cut
crosswise into 1-inch lengths, thick pieces haved
lengthwise
2/3 cup chicken or veg stock
2 Tbs maple syrup
salt and pepper to taste
1. Melt butter in large saute pan. Addturnips and
cook, turning occassionally, over medium heat until
lightly browned, about 8 minutes.
2. Add the carrots, stock, maple syrup, and salt and
pepper. Cover the pan, reduce heat, simmer until
turnips and carrots are tender, 15-20 mins.
3. Remove cover, raise the heat to high, and cook
until the liquid in the pan reduces to a thick glaze,
about 2 mins.
